This homemade bread combines soft, ripe bananas and sweet peaches in a delicious recipe. Made with whole grain Khorasan flour, the bread is moist and tender from Greek yogurt and butter. Preheat your oven to 180C

Step 1 - Dry ingredients

Step 1

  1. Mix all dry ingredients  - Set aside  

    Ingredients

    • 300 g Khorasan flour organic
    • 1 tsp Bicarb soda
    • 2 tsp Baking powder
    • 1 tsp Sea salt

Step 2

  1. With a hand held mixer mix all wet ingredients - Set aside

    Ingredients

    • 1 medium Bananas very ripe 
    • 2 ripe peaches 
    • 4 Eggs Organic, free range
    • 80 g Unsalted butter
    • 200Greek yoghurt
  2. Step 3

    Mix wet ingredients into dry ingredients - Gently mix ingredients until just combined to maintain a tender crumb

  3. Step 4

    Cut peaches in bits and lightly coat them in flour to help distribute evenly throughout the batter. 

  4. Final Step

    Carefully pour the batter into a greased loaf tin.

    Artfully arrange roasted mixed nuts and fresh peach slices across the surface.

    Dust lightly with ground cinnamon for a warm, aromatic finish.

    Reduce oven temperature to 170°C (340°F).

    Bake for approximately 55-65 minutes.

    Insert a clean toothpick into the center of the loaf. If the toothpick emerges with a few moist crumbs, continue baking for another 5-10 minutes.

    Once baked, remove from oven.

    Allow the loaf to rest for 20 minutes.

    Gently unmold the loaf onto a wire rack

    Allow to cool for 10 minutes before slicing
